Melandri Pieters spent her career as a teacher. The baking started long before that — at her grandmother’s side, learning the patience and technique behind excellent puddings. Not the kind of baking that comes out of a packet, and not the kind you rush. The sort where you are told, repeatedly, to wait.
In the classroom, the baking became legend. Students nagged her for more, always asking when she would bake again so they could buy. It stopped being a treat she brought in and started being something people planned around. One student put it in words the brand now lives by: “No other brownie compares to hers.”
What began as informal bakes for nagging students grew into a registered company with one promise: bring next-level brownies and exciting, proudly South African flavours to the country — and never lose the generosity it started with.
Why brownies, and why these six
A brownie is an unforgiving thing to make well. Too much flour and it turns into cake; too little time and it collapses; too much sugar and the chocolate disappears behind it. The version we bake is dense and fudgy, built on dark chocolate and real butter, and it is deliberately restrained so that whatever sits on top has room to be the loudest thing in the room.
That base is the same in every flavour. What changes is the layer above it, and every one of the six is a South African memory rather than an imported idea: Peppermint Crisp, Rooibos & White Chocolate, Pretzel Caramel, Dark Chocolate Cornflake Crack, Coconut Ice and Millionaire. Peppermint Crisp tart at every family gathering. Coconut ice off a school fête table. Rooibos, which most of the world still drinks as a curiosity and we drink as tea.
We are asked fairly often to add a seventh, and an eighth. We would rather make six things properly than twelve things adequately — though a few of the current six began life as somebody’s emailed request, so the door is not closed.
How we work
Every order is baked after it is placed. That single decision shapes everything else about this business: it is why we ask for a few days rather than shipping the same afternoon, why nothing sits in a warehouse, and why the brownie you open tastes the way it did when it left the kitchen. It also means we cannot take returns on food — so if anything arrives wrong, we replace it rather than argue about it.
Boxes go out in 6, 12 and 18, mixed however you like, with a flavour-map card and colour-coded stickers so nobody has to guess. Beyond that we bake for weddings, corporate gifting and celebrations from 25 brownies up — favour boxes, dessert tables, branded ribbon and card wording.
